Conference by Chef Louis-François Marcotte

It’s not every day that we have the opportunity to hear a well-known chef share his outlook on the industry!

On November 22, Louis-François Marcotte came to talk with students about his professional career and his focus on healthful food service trends at La Cage.

Mr. Marcotte is a well-known chef, entrepreneur, star presenter and author of a successful cookbook collection who has operated several restaurants such as Simpléchic, Le Local, Le Hangar and Cabine M. He has also appeared on several television programs, including Signé M on TVA.

The chef joined the Sportscene Group Inc. in spring 2015 and has since been named vice president of innovation and image for the brand.

This experience has given him background knowledge about the food service industry in Québec. “In Québec, 6.4 percent of the workforce is in the food service field”, he said.

He explained the new focus on health that he initiated as vice president of food services at La Cage – Brasserie Sportive (former known as La Cage aux Sports).

He has launched a real shift with a new, streamlined image and carefully-designed menu featuring fresh, local ingredients.

Of course, better training for kitchen employees has been a key focus during this change in positioning. Chef Marcotte offers this training to employees each week during Facebook Live sessions.

This presentation took place during the Tourism, Hospitality and Food Services Career Meetup, which gave LaSalle College students an opportunity to connect with representatives from several companies in these industries, including Groupe Antonopoulos, Estérel Resort, Croix Bleue, 3 Brasseurs and Fairmont Le Manoir Richelieu.
